Parmiggiana of courgettes with mint


  • Zucchini
  • Mint
  • Grated Parmiggiano (indicated in the diet)
  • Onion
  • 20g Vegetable Nut

Preparation: Clean and cut the courgettes and mint leaves into slices. In a large enough pot, add a of oil and chopped onion q.b. Brown the courgettes a few seconds, add half a glass of water and the vegetable nut, cover with a lid and cook for about ten minutes. When the zucchini are cooked salt to taste, add pepper and mint. Stir in the steaming courgettes by placing them in layers with the parmiggiano inside, so that the latter melts.
